The chef is so particular about quality that every tortilla is made from scratch.
If you’ve never had the opportunity to hit up the food truck scene in Los Angeles, now’s your chance. One of their very best, The Lime Truck, has set up a stall at PasarBella @ Suntec City and it opens today.
Founded in Orange County in 2010 by chef Daniel Shemtob with a friend, The Lime Truck has since expanded to five food trucks and three restaurants in Southern California. The PasarBella stall is its first overseas outpost.

The main event here is the tacos, and here are your options:
- no. 1 steak ($4.60), with soy ginger slaw and wonton skins
- slow-braised pork belly ($4), with green pico de gallo and sambal
- beef rib “The Gringo” ($4.50), with buttermilk fried onions and arugula
- fried chicky ($4), with buttermilk fried chicken and dijon slaw
- grilled barramundi ($4.60), with chipotle honey slaw and lime guacamole
- potato ($3.50), a vegan option with twice-cooked peewee potatoes

Aside from the choice ingredients and vibrant flavours, what we really love is the fresh and supple tortilla. Because the tortillas supplied locally weren’t up to standard, Daniel spent two months developing the ideal tortilla recipe so that his stall here can make them from scratch. Even his LA kitchens don’t do this!
The menu doesn’t end at tacos. There is a wonderful selection of sides ($3.90) such as elote (Mexican street corn), chicken skins, and—wait for it—the legendary Brussels sprouts. The moniker may seem tongue-in-cheek, but this dish is no joke, based on a recipe Daniel basically perfected in one shot. Oiled and charred vegetables tossed with pickled onion and topped with a crumbling of cotija cheese—we’re definitely coming back for that one.
Finally, you may wish to end your meal on a sweet note with their churros—cinnamon ($5.90) or matcha ($6.90). From start to finish, the Mexican offerings at The Lime Truck are pretty awesome. We suggest you head on down pronto.
