Grilled meat specialist Niku Katsumata has introduced a value A4 Wagyu beef set ($38) for petite diners. The five courses include Japanese pork prosciutto, kimchi and seasoned sprout, Chinese cabbage salad with umami seaweed, a selection of five slices of A4 Wagyu, and Japanese curry with A4 beef to finish. Interestingly, the beef is seared on a low-heat crystal plate, which cooks it gently. Chef Tsuyoshi Katsumata also offers a fantastic Tataki Wagyu ($20), topped on Japanese rice—add on sea urchin, ikura or foie gras for $5 extra each. Maguro-Donya has introduced unagi to the menu, in collaboration with Yamada Suisan, one of the best wholesalers of Japanese eels. The unagis are featured in four different sets. Our favourite is Unagi Meshi ($28.80), grilled for a beautiful tender bite, accompanied by onsen tamago with sweet teriyaki sauce. Crystal Jade Kitchen offers a new and improved menu of traditional Cantonese home-cooked specialties. We felt like we were in grandma’s kitchen as we sampled braised pork belly with beancurd and chives ($16.80), smothered with rich prawn paste gravy. Their assorted lotus paste buns ($5.30) are jazzed up for Instagram, in the shape of hedgehogs, piglets or chicks, filled with smooth sweet lotus filling.
